Spread over three different villages, the production offers different and complementary type of soils. JAU DIGNAC LOIRAC :. 18 hectares of deep gravels soils. 10 hectares, gravely on the surface and a mixture of chalk and clay below the surface. 25 hectares on gravely-sandy soils. Before planting, we do an analysis of the ground to choose the most suitable rootstock to grow in the best possible way. The varieties we have chosen are typical of the Medoc region :. 50% de Merlot noir. Trellising twice a year.

Traditional methods are used to make our wine, but the main objective is to obtain very mature ripe grapes which are vinified separately, according to their origin, in stainless steel vats. During the entire fermentation period, the wine undergroes 2 daily pumping overs and one punching down. The maceration period lasts between 21 to 28 days. The last step is made in collaboration with our oenologist : Mr Eric Boissenot. This stage is of the greatest importance;.

A compter du millésime 2006, il commercialise la production issue des vignes situées à QUEYRAC sous la marque Château GEMEILLAN, reconnue Cru Bourgeois à partir du millésime 2009. En 2012, il achète sur l'excellent terroir de VALEYRAC, une propriété viticole connue jusqu'alors sous les marques Château LALANDE VILLENEUVE et Château LALANDE DE GRAVELONGUE, portant la surface totale du vignoble à 50 hectares.

Juin 2016 : Escale de "Passion Rétro Auto Motos". Dimanche 05 juin, Château Saint-Hilaire accueille une cinquantaine de véhicules de collection dans le cadre d'une sortie intitulée "Chemin de traverse en Médoc" organisée par Passion Rétro Autos Motos. Evènement rassemblant voitures et motos dont les plus anciens datent des années 30 et les plus récents, des années 80. Château Saint-Hilaire’s vineyard was born in 1982 in JAU DIGNAC LOIRAC, on deep gravel soils dominating the Estuary of the Gironde River. Little by little, Adrien UIJTTEWAAL extends his domain to QUEYRAC, a neighbour village on the crests of the gravel and clay hills with a regular of planting as well as the purchase of thirty year old vines.
