Tonight's was pretty good and easy, too. I am ALL for easy. And as an added bonus, the kids even liked it! Juice of one lemon. 3 garlic cloves, crushed. 1 Tbsp Olive Oil. 3 medium zucchini, cut lengthwise. 3/4 c crumbled goat cheese. 1 Combine lemon juice, garlic, oil in a zip-lock bag.
