Wednesday, April 21, 2010. First off, I apologize for not posting for so long. James and I began Body for Life which requires me to work out daily (except Sunday). So I've been cooking healthy, just not posting the healthy things we've made. This recipe is sooo yummy. We loved all the flavor it has. It's also fairly fast and cheap because it makes tons! 10 saltine crackers(whole wheat)finely crushed. 1 Tbsp grated Parmesan cheese. 1 Tbsp fresh parsley (or dried). 1 lb lean ground beef. 1/2 c chopped onion.

Thursday, May 20, 2010. Crisp Wontons with Strawberries and Yogurt. My friend, Emily Dougall, lent me her Everyday Food magazines that are packed with "Fast and Healthy Dishes in 30 minutes or less". I was pleasantly surprised with Miss Martha Stewart's recipes. This one is a fantastic spring/summer snack! 1 Tbsp. butter, melted (or substitute with H2O). 3 Tbsp. sugar. 3/4 c whole natural almonds, finely chopped. 1 cup plain greek yogurt (or fat free yoplait any flavor or ricotta). 2 Tbsp. honey.

Tuesday, February 22, 2011. Yummy Thin Crust Pizza. I decided I needed to put more family friendly, fast recipes that people could use weekly or monthly. Something reliable and loved by many. So I turned to my sister Mary, mother of 5 who makes this every "Friday Pizza Night". It is so fast,good, and cheap. She triples the recipe but for a family of 3 we did it exactly as written and it worked great! 1 package yeast (1 Tbsp.). 1/4 tsp. sugar. 3/4 c hot water. 1 3/4 c. flour. 1/2 tsp. salt. 2 t baking soda.

Monday, March 15, 2010. Parmesan Chicken French Bread Pizza. Thanks to Laura Larson, my mom, I can make pizza and salad in under 15 minutes for under $5! Can you tell that she had 8 children? 1 loaf of french bread. 1 small can of tomato or spaghetti sauce. 1 1/2 c. mozzarella cheese. 1 chicken breast, grilled in garlic and olive oil, chopped. I used sun dried tomatoes, onion, red bell pepper, spinach, a little low fat ricotta cheese,. And Parmesan cheese sprinkled on top. Dinner in a snap! 1 cup of water.

No more allergies to the house and after some blood, sweat, and tears (literally) it is shaping up to be pretty nice inside and out. What we love the most is having a yard and grass! No more pine trees. Our neighbors had 8 huge, beautiful, and shady pine trees in their back yard that we got to benefit from. Now they are gone. We have no afternoon shade anymore and no privacy that we enjoyed so much. But what we do have is 2 years worth of firewood! Yep, they gave us all we wanted and we took it all. Thank you! If any of you ever want a nice cozy winter fire, come on over.we are sure to have one every night this winter. You will be missed! Wow those were HUGE! Cheap and guilt free.

Released from Young Women's. Oh man.today I got released from being laurel advisor in young women's. Can I just tell you I have never known such incredible girls as these? They lifted me in more ways than anyone right now. I got a knock on my door tonight and as I opened the door, there was a plate of sugar cookies and a card. One of the girls, Sarah, wanted to say thanks for being her teacher/friend/neighbor. Ahhhh.love her! I'll post more later, but that is what is going on with me now.
