DECEMBER . 2008. Luke's been saying the word more. Dave played The Throw Game. Luke's dad just told me that after preschool this morning he was talking to the preschool coordinator for a while, walking to the car. At one point Luke tried to get his dad's attention because he was looking up and saw an airplane and was watching it in awe. Dave could not believe it! The type of cold that makes your eyelashes freeze shut, and takes your breath away. Currently, it's -42C with the windchill. That's cold. What better way to keep the house warm and wonderful smelling, than to make a batch of Cinnamon Oatmeal Muffins! Egg, dairy, soy and nut free). 1/2 cup sugar (I did use a bit less than this). 2 tsp baking powder.

I had some almost too ripe banana's that I had frozen awhile back. I often throw bananas in the freezer as they're getting past the eating point, to use in baking etc, so I always have a bit of a stash ready for me. This is so easy, and so tasty, and according to both my 3 and 5 year old, tasted pretty close to the real thing! Cut your frozen banana into pieces.

Recently, I purchased a HUGE tub of delicious coconut oil. Coconut oil has so many health benefits, and there is nothing I don't love about it. So, I decided to try to create cinnamon buns using coconut oil! They turned out amazingly! Please forgive the shape of some of them, but really, it's all about how they taste, right?
