Newer posts →. September 11, 2013 · 7:00 am. Cheese Talks at McEwan Fine Foods–join us for fine cheese, fine wine and other fineries, like chocolate. I’m very excited to announce a new-ish venture for which I have teamed up with fellow cheese lover and friend Ally Chang. We kept sitting around and eating cheese and drinking wine, and talking about the cheese and wine when we had the epiphany we should do something constructive and fun with this hobby. So we have created The Cheese Table. So without furth...

And so they tasted like… – Louise's Cheeses
https://louisescheeses.wordpress.com/2014/05/24/and-so-they-tasted-like
Musings of a budding professional fromager. And so they tasted like…. Today in class, one of the students brought two of her cheeses because she will not be there next week, when we all bring in our homework for final grading. She told us that something strange had happened to her cheeses: they dried out and became hard. We had a taste of them and they were really good, but they definitely were not Camembert-like. More like a bloomy chevre. My oh my…. It was ooey and gooey in there! You are commenting us...

https://louisescheeses.wordpress.com/2014/05/21/bloom-watch-may-21-2014
Musings of a budding professional fromager. Bloom watch – May 21, 2014. All the baby cheeses are now wrapped and ready for the last week and a half of their aging cycle. I really look forward to seeing the difference between the cheeses that spent time in the cooler versus the ones that were in the refrigerator, and also the ones that were washed and wrapped in cider. I am also really looking forward to tasting those cheeses! Leave a Reply Cancel reply. Enter your comment here. Address never made public).
Cheesy breakfast sandwich – Louise's Cheeses
https://louisescheeses.wordpress.com/2014/05/19/cheesy-breakfast-sandwich
Musings of a budding professional fromager. Spring has finally sprung here in Ontario, and that means two of my favourites – ramps AND asparagus – are in season! I cannot get enough of them and couldn’t wait to hit St. Lawrence Market on Saturday to get some. Today being Victoria Day (or Journée des Patriotes in Quebec), I decided I would treat us to a special breakfast of roasted asparagus and a cheesy breakfast sandwich. For two sandwiches, you will need:. Salt, pepper and cayenne. A bit of olive oil.

Musings of a budding professional fromager. Brebiou, Picobello, Chaumes. Cheese school starts next week and to “warm up” for it, I decided I would formally taste new cheeses. Not that I have not indulged in wonderful cheese all summer, but I did it with enjoyment in mind, and was not very good at all with writing tasting notes. Aka Miss @kitchenoperas, and by a very good colleague of mine. Can you tell I’m excited yet? I shopped at my local cheesemongers, The Cheese Boutique. I really really liked this c...

Our ‘research’ led us to a brewery that mixes two good ol’ fashioned past times: beer and baseball. Left Field Brewery. Is taking Toronto by storm and they’re laying down roots here in the east end. Actually, it’s great. Left Field brews beers with a focus on quality ...Monday,...

Tuesday, July 14, 2015. Summer Magic: Urban Fairies Take Over Danforth. The first time we heard that there were going to be fairy doors showing up along the Danforth, we were a little bit skeptical. After all, we know that fairies don't really like hot weather (thanks to Junior Pioneer #1 for confirming this is true) so we wondered what on earth they were doing on our little strip of Danforth. However, we realized that the Danny's Urban Fairies. So don't miss all the fun. It starts today (July 15) at...

What Exactly is Cheese? October 27, 2014. Cheese is concentrated milk. In order to answer that question, we need to take a step backwards and look at what milk is. Milk has Water, fat, Casein (Protein), Lactose (sugar), and various vitamins and minerals. The first step in turning milk into cheese is Souring the milk. Bacteria, just like in making beer, is added to begin breaking the lactose into lactic acid. The curds are cut to release more water. Be Happy, Say Casomorphine. October 26, 2014. Most commo...
Cheese and TERROR!!!
Friday, July 19, 2013. I know, most of you are used to me writing about the worst films ever made, with the occasional political rant. So.this is different. This is a conversation about my experience with a current, albeit conventional horror film, The Conjuring. I want to present a few spoiler alerts:. A) I liked the film, and will mention that ad nauseum (though my buddy Joe P. found it a HUGE letdown). B) I liked Mama, from Del Toro, a lot more, for myriad reasons, only one of which I will mention.

Mixed-Milk Soft-Ripened Cheese, and Other Love Stories. February 13, 2011. The most memorable pairing was gorgonzola with dark chocolate. Cheese & Vegemite | A tale of two Aussies in Switzerland
A tale of two Aussies in Switzerland. Chocolatier Tour in Brussels. We recently did a little weekend trip through Belgium and Holland and whilst I would normally cram our weekend itinerary in one post, I thought I would split it in two. Part one will focus entirely on the first half day of our four day weekend during which we ran frantically in and out of Chocolatier’s in Brussels, sampling and purchasing a lot of chocolatey goodness.
