COOKING CLASSES – OFFAL. Start with an ale and a canapé. Puffed pigs skin and cod roe. Buttered radishes with salt. AND THEN WE WILL COOK AND EAT TOGETHER. Fried pigs head brawn with green beans, parsley dressing. Fish head terrine, curried lentils, and deep-fried capers. Lambs tongues, sweetbreads, chicory, sweet mustard. Beef faggots, kale and onions. Quince and almond tart with vanilla bean ice cream. Dishes will be served to share at the table with some good bread and wine. Butter head lettuce salad.
