Matt's Sweet Mild Hot Texas Chili. Here is the true Texas Chili. no beans, if you put beans in chili in texas they will slap ya. When i lived there for several years, one learns how to make chili right. Sweet, savory and delicious. Make the Grilled cheese with it for a side and you will love it. This one i garnished with parsley and fresh thyme sprigs. 4 tbsps Olive oil. 3 pounds cubed (1 inch cubes) beef shoulder. 1 tbsp Ancho chili powder. 2 tbsp chili powder. 1 tbsp ground coriander. 1 cup tomato puree.

Matt's signature Savory Hot wing sauce. For those who enjoy really hot sauce that will kick, check out my Ghost chili sauce recipe. That one is comig soon. 1 Cup Franks Red Hot or my buffalo sauce recipe (posting soon). 2 cloves garlic, minced finely. 3/4 cup brown sugar. 1 tablespoon white sugar. 1 pinch ancho chili powder. Little more than 3/4 stick of butter or margerine. 1 pinch of fresh ground pepper. 1 Melt butter in a sauce pan. 2 add garlic and stir over medium heat for 30 seconds.
