Life as I know it. Tuesday, April 24. Black Bean, Avocado and Red Pepper Quesadilla. Made these tonight. Delicious. We added Chicken but the recipe doesn’t call for it. For dessert we made this great fruit dip. Healthy dinner, healthy fruit, I think we deserved a little treat and it definitely is a treat! Click on the picture for the website/recipe). The Quesadilla’s were a bit messy but so worth it! I’m sure they will be a favorite in our family (once I make them for Bryan) :). Thursday, April 19.

Life was just a bit busy this week, all classes decided to have tests and long readings due on the same days… at least it’s over and we only have 2 days of classes before a much needed break.
