Wednesday, May 11, 2011. Peaches and Cream Oatmeal. Today is bright and sunny and it's going to reach 70 degrees here in Montana! I am overly excited.but I'm sure we haven't seen the last of the snow. Last night I went to bed thinking about breakfast. You see, we are out of Almond Butter. Oatmeal/banana soft serve parfaits. Friday, May 20, 2011. Whole Wheat Shortbread Cookies. Can you believe it's already Friday? Only 3 more days till I start my new job, and I am super excited for it! Yesterday I was getting the itchin' to bake something, but I am out of bread flour, white flour and Xanthan Gum! All I have is Whole Wheat flour, so I looked around for a recipe. I found this Whole Wheat Shortbread. Recipe from The Seattle Time from 2003! Adapted from The Seattle Times. 2 cups whole-wheat flour. Sugar or "Sugar in the Raw".

Monday, May 23, 2011. Today is my first "real" Monday since August! It's my first day of my new job! I am extremely excited to start! I'll be working as a Teacher Assistant at a Christian School just down the street from our home. I'll still have plenty of time to reach my goals with Wildtree, but I'll be able to get out at meet more people here in our new town. I also took on some rainy day runs.
