Monday, July 22, 2013. I threw these together with some leftover Crock pot Salsa Chicken. And whatever else I could find in the kitchen that sounded good. The chicken, by the way, is SO good. I usually make a bunch of it for tacos and freeze the leftovers. Tuesday, July 9, 2013. 3 (4oz) cans whole green chilies (you need 8-10 chilies). 1 1/2 cups beaten eggs (I use the already beaten stuff from Costco). 1 cup shredded cheddar cheese. 1 tsp chili powder. 1/2 cup diced green onions. Preheat the oven to 350. Spray a 9x13 baking dish with cooking spray. Mix the eggs, milk, flour and paprika together and pour over the chilies. When I signed us up, it was really because everyone told me how great it was for the kids. I would do anything to see my kids smile. So, I went online an I applied and we were approved. I had no clue what we were in for. Waiting to board the plane. My kids have never been on an airplane. We have never been to Texas. We had never gone anywhere just the 4 of us. Things have been hard lately emotionally and I truly felt a few days away in honor of their dad would be good and healing. Kids with their balloons.
