This Eton mess comes giant-sized and includes the addition of healthy Greek yoghurt and not-so-healthy marshmallows. First of all, whip some double cream into a frenzy, preferably using an electric whisk. Add some sugar (granulated will do) to sweeten a little. In our quest to develop the poshest burgers possible (a valiant quest given the competition out there), this week saw the birth of our Leblon burger. “Leblon” because this is a posh beach area of Rio de Janeiro. Two streaky rashers of bacon, dry-fried until crispy are placed on top and it’s all finished with a fist of rocket and tomato ketchup.
