I photographed a Duck Breast with Cauliflower Pudding, Fermented Cauliflower, and Beer Gelee. It’s basically a deconstructed Belgian ale, with the hop, barley and yeast characteristics remixed into various elements, over top of beautifully cooked duck and cauliflower/romanesco.
