750 gram(s) Beef mince. 3 tbsp Olive Oil. 500 ml Tomato Sauce. 1 cube(s) Beef Stock. 4 sheet(s) Puff Pastry. Sautee Garlic and Onions in Olive Oil. Add mince and brown - add salt and pepper to taste. Add tomato sauce and simmer for 15 mins. Allow mince to cool. Lay puff pastry sheets flat and add large amount of mince mixture to middle of sheet - roll into large sausage roll. Brush puff pasty with beaten egg and put in 200 degree oven for 30 mins.

Wine-poached nectarines with sweet creme fraiche. 2 tbsp Castor sugar. 250 gram(s) Creme fraiche. 3 whole Star anise. 375 ml White wine. PREPARATION: Nectarines stones removed and cut into 6 segments each. 1x Orange peeled and 1x orange zest. METHOD: Add the water, wine, honey, cinnamon sticks, star anise, coriander seeds and orange peel to a pot. Bring to the boil and simmer for 10 mins. Spoon creme fraiche into a bowl and add castor sugar and orange zest. Stir well to combine.

Calamari and Chorizo Casserole. 500 gram(s) Calamari Rings. 1 can Chopped tomatoes. 1 clove(s) Crushed garlic. 2 tbsp Olive Oil. 2 tbsp Paprika paste. PREPARATION : Finely chop the onion; Slice the Chorizo; Chopped fresh parsley;. Heat the oil and quickly saute the calamari in batches for about two minutes. Set aside. Add the garlic, onion and chorizo. Cook for about 5 mins or until soft. Add the can of tomatoes and paprika paste and simmer for about 10 minutes, adding a little water if needed.
