Red Chili Salmon Tartar. This is basically a salsa with a little extra lime juice and fresh Scottish salmon. Very easy to make and it makes a pilsner sing. Red Chile Salmon Tartar (Pair with Breckenridge Brewery Regal Pilsner). 1 ripe avocado, diced. 1 med cucumber, peeled, seeded and diced. 1 pasilla pepper, seeded and diced. Medium red onion, julienned. Bunch cilantro, chopped. Zest of 1 lime. Juice of 2 limes. 1 tsp dark chili powder. 1 tsp cumin, ground. 2 Tbs olive oil. 2 Fold in the diced salmon.
