It's Lent, so that means Spanakopita here in our house! 3 10 oz pkgs. frozen chopped spinach, thawed. 4 medium onions, chopped. 6 whole green onions, chopped. 1/4 cup olive oil. 1/4 cup minced fresh parsely. 1/4 cup minced fresh dill (DON'T SKIMP ON THIS! 1 teaspoon cream of wheat (Don't freak out, it's to just help the filling bind up). 5 eggs, beaten. 1 cup cottage cheese. 1 1/2 cups crumbled feta cheese. Wednesday, November 9, 2011. Lovin' his Pad Thai! Pound of thick tubed noodles (we like the whole wheat Perciatelli from Whole Foods). Fresh Ginger (grate about a teaspoon or two). Minced Garlic (I threw in about a teaspoon). 1 1/3 cup veggie broth. Soy Sauce (use the low sodium kind). Sweet Chili Sauce (We love Mai Ploi in our house! Rice Vinegar (You can use White Wine Vinegar if that's all you have). Snow Peas (pick up about a pound). Bell Pepper (2 or 3)-Cut into Strips. Carrots (2 or 3)-Shaved.
