This is a topping that is good on baked, broiled, or fried fish that isn't too heavily seasoned (i.e. it's a fast topping for a fast lunch or dinner). So, so yummy! 1 pkg frozen spinach, thawed. 1 jar marinated artichoke hearts, chopped. 8 oz cream cheese. 8 oz sour cream. 3/4 c shredded Parmesan cheese. 8 oz shredded Monterey Jack cheese. 1/2 small onion finely chopped. 1/2 red bell pepper finely chopped. Remove from heat and pour into 8x8 glass pan. Top with Monterey Jack cheese and melt in oven at 350 degrees. Serve hot with bread, chips, or veggies!
