Hand-picked biological agriculture olives are worked for Extra Vergine within 24 hours from harvesting, disk-crushed and separated in a continuous system at temperatures below 30 C, and a few hours from this, passed through a biological cotton filter. Intense nose, fruity with scents of thistle and aromatic herbs. Full taste, good length, sweet, pungent finish with clear artichoke recall. Goes well with soups, salads, bruschetta, pinzimonio, roasts etc.

The palate is soft and harmonious, with a full and structured tannin. The final is broad and enveloping, of great length, the balsamic spicy comes back, with notes of liquorice and cacao that integrates beautifully with the tannic matrix. Collemattoni prende il nome dall’omonimo Podere che con il tempo è diventato il marchio della nostra Azienda Agricola. Collemattoni è situato su una collina nel versante sud del comune di Montalcino a due passi dal borgo medievale di Sant’Angelo. Il podere risale almeno al 1672, anno in cui sugli archivi parrocchiali viene registrato come abitazione di una famiglia, il primo accenno della famiglia Bucci riporta al 1798 con Giuseppe Bucci zappaterra a capo di una numerosa famiglia.
