Slice pieces of prosciutto in half (lengthwise). Wrap prosciutto around scallops and secure with a toothpick.

Super Simple Shrimp Scampi. 1 lb frozen shrimp, thawed. 3 tablespoons lemon juice. 1 tablespoon olive oil. 2 tablespoons minced garlic. 3 heaping tablespoons of Smart Balance. Serve the shrimp mixture over pasta and season with parsley.

Cook on low until chicken is cooked (I usually let mine sit for 2-3 hours). Use two forks to shred chicken into small pieces.

Slice peaches into 1/4 inch slices. Layer the peach slices in the baking dish and top with the brown sugar crumbs.
