I'm letting her quit band. It was kind of big for me, but she is not loving band, and she really loves doing the other stuff. So, I'm letting her follow her heart, this time. Get on it Heather! So here follows my version of the Enchilada Pie:. 1 1/2 pounds ground beef. 1 onion, chopped. 1 (8 oz) can tomato sauce. 2 (15 oz) can mild green chile enchilada sauce (a change from the original, adds a different flavor from the regular red sauce). A bunch of corn tortillas * I think I used about 15-20* You could use flour tortillas, that's one of the changes I made, but it's NOT as good.I do enjoy the corn tortillas! Don Pierson passed away peacefully this morning at 11:10 am(EST) after battling the effects of a rare blood disorder which resulted in leukemia. One week before his death, he was able to visit with each of his children.
