February 25, 2013. 1 cup buckwheat flour. 2 Tbs coconut sugar or stevia. 1 tsp baking powder. 1/2 tsp baking soda. 1 egg, whisked. 2 Tbs melted coconut oil. 1/4 cup Enjoy Life chocolate chips or fresh blueberries (optional). I make buttermilk by adding a tablespoon of apple cider vinegar to coconut or almond milk and allowing it to sit for two minutes or so. You can also use regular buttermilk if you consume dairy.
