Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. 4 cups cold cooked rice. 2 eggs (more if desired).

Shell the prawns and remove the tails. From the interior curve, cut the meat leaving the thin layer on the back. Mix soy sauce, garlic, wine, salt and ginger. Dip prawns into corn flour. Drain and keep it aside.
