Thursday, September 8, 2011. Zacusca de legume este preferata mea. Gogosarii, rosiile, ardeiul capia si morcovii contin multe vitamine ceea ce inseamna ca, pe langa faptul ca ii dau un gust aparte. Zacusca este si foarte sanatoasa. Este o mancare usoara si o consumam iarna sau vara, acasa sau la serviciu. 500 g ardei capia. 5 căței de usturoi. 100 g ulei (sau un pic mai mult). 1-2 foi de dafin. ISe coc gogosarii si ardeii, se pun in apa rece, dupa care se curata de coaja, apoi se taie în fasii (Julien).

Eu prefer pestele alb, are mai mult iod si omega 3. 1,5 kg peste. 1-2 foi de dafin. 2 catei de usturoi (optional). ISe curata pestele, se spala, se taie fasii, se sareaza, apoi se prajeste in ulei incins. IICeapa se caleste separat. IIICastravetele, morcovul si radacina de patrunjel se fierb (taiate felii). Se trec prin sita. VIntr-un vas mare se pun rosiile, zarzavatul fiert, ceapa calita si sare dupa gust.

ISe aleg ardei mari si sanatosi, se spala, se indeparteaza cotoarele si semintele si se lasa la scurs. IIVarza se curata si se taie fideluta, se freaca cu sare si se stropeste cu zeama de lamaie. IIIMorcovii se curata, se dau pe razatoare si se amesteca in varza. VIISe inchid borcanele ermetic, iar dupa racire se pun in camara.
