My So Called Life. Sunday, December 26, 2010. The Lights and Coles Birthday. Cole's birthday was the 18th and he said he wanted to go to dinner and see the lights for his birthday. So Friday the day before his birthday we headed down to Salt Lake to see the lights at temple square. Even though the lights are the same every year they are still amazing! My So Called Life. Wednesday, June 16, 2010. Cache Valley Classic Triathlon. Cole and I had our triathlon last saturday and boy was I nervous! Once I got into the water and started swimming all my nerves went away. I ended up LOVING IT! Yeah my body was a little haggard afterwards, but it was SO worth it I think I just might do another one :) Cole finished the race in 1 hour and 35 minutes and placed 4th in his age group! Here are a few more pictures. This is me swimming. Cole on the bike. Cole and I :).

In an attempt to make sure the bottom of the chicken didn't get too soggy, I put cooling racks on a cookie sheet and baked the chicken on top of that. I don't know that it worked any better than putting the chicken directly on the cookie sheet, but it can't hurt. 1/2 cup butter (I used olive oil). 4 cloves garlic, minced.
