Healthy food options made by and for young people. Monday, August 3, 2009. Mini Fried Eggplant Sandwiches. Last Friday we made little fried eggplant sandwiches with ingredients from the garden. We fried eggplant slices in olive oil and soy sauce, then put the slices on crackers with tomatoes, basil leaves, and cheese. We topped it all off with some hot sauce. They were so good!
