So we had some leftover mango salsa last night and it was just too good to throw away! And I’m glad I didn’t! This time I just used some salt and pepper and topped it with the leftover salsa after it was cooked! I’ve also baked it with honey teriyaki dressing on top, and another time with a little bit of lime juice and some breadcrumbs. All good! Shrimp Tacos with Mango Salsa.

Tonight was the first night we grilled and ate on the deck! What better way to kick off the grilling season than with shrimp tacos? Last summer I made these shrimp tacos with peach salsa.

Cook time: 15 min. 1 frozen pie crust. 1 box sugar free vanilla pudding. Fat free milk (amount variable due to different pudding mixes). 6oz semi sweet chocolate chips. 1 spoon or rubber spatula. 1 large pot of water. Follow baking instructions for your choice of frozen pie crust. After baked, allow to cool. Prep time: 30 min. Cook time: 20 min.
