Summertime and Gazpacho Is Easy. June 15, 2015. I love gazpacho. And with summertime comes easy access to fresh ingredients. Also, the heat when a cold soup is most welcome. I’ve tried various recipes. Some call for removing the seeds and pulp from the tomatoes. I don’t. There’s flavor in that pulp. Why remove it? I do, however, seed the cucumbers. It’s easy. Cut the cucumber in half and scoop out the seeds with a spoon. 2 Red Bell Peppers. 2 Cucumbers, peeled and seeded (long way). 1 1/2 cup Water.
