Summertime and Gazpacho Is Easy | cookingfearlessly
https://cookingfearlessly.wordpress.com/2015/06/15/summertime-and-gazpacho-is-easy
Summertime and Gazpacho Is Easy. June 15, 2015. I love gazpacho. And with summertime comes easy access to fresh ingredients. Also, the heat when a cold soup is most welcome. I’ve tried various recipes. Some call for removing the seeds and pulp from the tomatoes. I don’t. There’s flavor in that pulp. Why remove it? I do, however, seed the cucumbers. It’s easy. Cut the cucumber in half and scoop out the seeds with a spoon. 2 Red Bell Peppers. 2 Cucumbers, peeled and seeded (long way). 1 1/2 cup Water.

Venus de Milo Soup. September 13, 2015. September 13, 2015. Photo courtesy of Dawnab on Food.com. Now don’t get your knickers all in a twist when you read the list of ingredients. This is not a soup for the faint of heart. Nor is it one that my gluten-free, vegetarian and vegan friends will be lining up for. It is, however, a taste of my childhood (and on into adulthood, I confess). But if you’re looking for something that is a blast from the past, good tasting and easy to make, here it is:. I used my ro...

I Wanna Be a Mini-Me of America’s Test Kitchen. June 6, 2015. Thanks to the Muppet Show for this wonderful image. The whole concept of it. The revamping and improving of recipes. The testing of equipment and products. The magazine, Cook’s Illustrated, which I have been reading for years. And the PBS show, including it’s cousin,. Both of which I am now watching via Amazon Instant Video. So if you know America’s Test Kitchen, you get what Cooking Fearlessly is all about. The joy is in the trying. Would nec...
Spaghetti Sauce Test: Two Down and Two Too Many to Go | cookingfearlessly

Spaghetti Sauce Test: Two Down and Two Too Many to Go. May 19, 2015. When I decided to test out the spaghetti sauce recipes I have gathered over the years, one extremely important point eluded me. That I would feel compelled to eat all this sauce. Well, I have and I am very sick and tired of spaghetti (and meat balls) in any of its iterations. But if I’m going to continue this experiment then I need to change my plans. I then thought I’d just cut the ingredients to make a small amount for testing purposes.
Sometimes You Just Have to Toss It | cookingfearlessly

Sometimes You Just Have to Toss It. July 10, 2015. And I mean throw it out, not throw it up. As in the case of my experiment with a frozen gluten-free piecrust. Yes, I do use frozen piecrust. (Pillsbury in the box. My favorite and the winner of the testers at America’s Test Kitchen.) So when a friend offered me a frozen gluten-free piecrust she said she wasn’t going to use, I took it. I was so wrong. When I got back, I checked the crust. More cracks had appeared. (Like the breaking of the ice shelf i...

I Owe Ina Garten an Apology. July 22, 2015. I’ve mentioned before that I was on a quest to find the best gazpacho. I thought I had. Then, while browsing the cookbooks in the library, I came across an Ina Garten cookbook I don’t own, Barefoot Contessa Foolproof. I borrowed it. Took it home. And began to look through it. I came across Ina’s Gazpacho recipe on page 64, easy gazpacho and goat cheese croutons. The first ingredient is two cans of whole peeled tomatoes. Cans? Hello Stand back. Whoa Nellie!
