Strawberry Syrup | Cooking in Colombia

https://cookingincolombia.wordpress.com/2013/12/09/strawberry-syrup

A blend of American and Colombian cuisine. December 9, 2013. I made this strawberry syrup to add to some delicious strawberry icing. I made, but I think it would also be delicious on pancakes, ice cream, etc. Makes about 2 cups. Add strawberries, granulated sugar, and water to a medium saucepan and bring to a boil over medium-low heat. Reduce heat and allow to simmer about 10 minutes. Remove from heat and pour into a blender. Blend on high speed for 10 seconds or until smooth. December 9, 2013.

Muffins de Mora | Cooking in Colombia

https://cookingincolombia.wordpress.com/2014/02/01/muffins-de-mora

A blend of American and Colombian cuisine. February 1, 2014. I got an urge to bake today. (This is almost a daily occurrence) I walked down to the local supermarket to pick up some ingredients to make some Sour-Cream Anise Pound Cake Muffins (that I was going to invent), and low and behold, the Éxito only had star anise. I was bummed out, but I decided to make good ol’ blueberry muffins – I hadn’t made those in a while! Days earlier and they were out! Moras, freshly washed with their stems removed. Do no...

Citrus-Mango Muffins | Cooking in Colombia

https://cookingincolombia.wordpress.com/2014/01/30/citrus-mango-muffins

A blend of American and Colombian cuisine. January 30, 2014. I moved cities a couple of weeks ago – from Bogotá to Pasto. I’m loving my new place – A LOT! This past weekend, I tried some of the most delicious mangos that I have ever had in my entire life at the Saturday market here in Pasto. I was in awe of the juicy flavor of these amazing fruits, and it inspired me to try to make muffins out of them! Makes about 1 dozen muffins. Diced mango (about one large mango). 3 – 4 teaspoons. Beat the eggs lightly.

Green Bean Casserole | Cooking in Colombia

https://cookingincolombia.wordpress.com/2013/11/18/green-bean-casserole

A blend of American and Colombian cuisine. November 18, 2013. Green bean casserole might be one of my favorite Thanksgiving dishes and it is so simple – canned green beans, cream of mushroom soup, and french-fried onions! It is one of the few things that I never make “from scratch.” This was to quickly change, especially since I live in Colombia! Ready to eat at Thanksgiving dinner. Makes about 8 servings. Preheat oven to 350 degrees F (175 degrees C). Cleaning and cutting up green beans for the casserole.

Chocolate-Chip Chocolate Mascarpone Cupcakes | Cooking in Colombia

https://cookingincolombia.wordpress.com/2013/12/09/chocolate-chip-chocolate-mascarpone-cupcakes

A blend of American and Colombian cuisine. Chocolate-Chip Chocolate Mascarpone Cupcakes. December 9, 2013. Yesterday was one of my dearest friends in Bogotá’s birthday. I wanted to do something special for Ingrid, and what better way to show your love than through homemade cupcakes? Easier said than done. I have an awful cold at the moment, and was almost reduced to tears when the altitude destroyed my trustworthy recipe that I love! What a disaster…. This was a challenging experience – I had issue...
