It’s gluten free, and it can also be vegan if you get vegan soba noodles! I found vegan ones at Whole Foods for about $3, and non-vegan ones were similarly priced. Soba Noodle Salad with Ginger Peanut Dressing. 6 oz low-sodium buckwheat soba noodles. Cup brown rice vinegar (white rice vinegar is also fine). 1 Tbs lime juice.
