From the kitchen of. 1 1/4 cup flour. 1/4 cup vegetable oil. 1 Tbsp baking powder. 2 1/2 cups Bran Flakes. 1 1/4 cup milk. 1 cup blueberries (optional). Stir together flour, sugar, salt and baking powder. Set aside. In large bowl, combine Bran Flakes and milk. Let stand 2 min until cereal softens. Add egg and oil. Mix. Add flour mixture to cereal mix, and blueberries if desired, and stir only until combined. Bake at 400 for about 18 minutes. Makes 12 muffins. Always a hit (and no oven required)! Cut into...

I get to make dessert for school lunch on occasion, so it was a great opportunity last week to try my hand at it, and not be left with dozens of tempting doughnuts in the house!
