Cajun Maquechou (pronounced Mock-shoe) a Corn Dish. 1/2 lbs. bacon, chopped. 2 (17-1/2-oz.) cans whole-kernel corn, drained or 2 lbs frozen corn thawed. 1 large onion, chopped. 2 medium garlic cloves, minced. 1 large green bell pepper, chopped. 2 medium tomatoes, peeled and chopped or 1 can stewed tomatoes. 1/2 teaspoon freshly ground black pepper. 1/2 tsp red (cayenne) pepper. 1 cup canned chicken broth. Makes 6 to 8 servings.
