Saturday, August 6, 2011. Here is my latest salad creation. Lettuce salads are kind of boring to me these days. I love trying different salads.like warmed salads, dark greens salads, or salads with roasted veggies. I named this one a "power salad" because it is packed with lots of healthy foods that give you energy. I especially love this salad after yoga. Then I feel super energized! 1 bunch organic kale. 1 can chickpeas (hmm lentils may work well too! 1/2 of a medium red onion - finely diced. Rinse whe...

Crunchy Ema: January 2011

http://www.crunchyema.blogspot.com/2011_01_01_archive.html

Saturday, January 29, 2011. So there was a period of time when my husband and I ate indian food all the time. Throughout my pregnancy I craved indian food until the day that I delivered. I wish I had came up with this recipe then because lassis are so refreshing and mangos are so healthy.the perfect pregnancy combo! Mango lassis are my hubby's fave, probably because he loves mango so much. Here is one that I came up with:. 3/4 C fat free organic plain yogurt. 15 C mango chunks. Wednesday, January 26, 2011.

Crunchy Ema: February 2011

http://www.crunchyema.blogspot.com/2011_02_01_archive.html

Tuesday, February 22, 2011. My grandma used to always make tuna burgers when I was growing up. I am not going to lie, the idea of fish in a cake like form made me a little grossed out. So I definitely grew into this love later in life. Now I love any kind of non-meat burger! Try serving these burgers up with greek yogurt with a dash of dill instead of sour cream, or with plain old ketchup! 2 cans wild salmon. 1/2 cup egg beaters (or two eggs). 1/2 small onion, finely chopped. Thursday, February 17, 2011.

Crunchy Ema: May 2011

Thursday, May 5, 2011. Happy May, readers! Here is how I make home-made frozen yogurt without an ice-cream maker. My husband and I love frozen yogurt in the spring.summer.and really all year round. It's such a healthy and refreshing dessert but unfortunately the habit can be costly. I pretty much live off of plain yogurt so when the tart frozen yogurt craze hit a few years ago I was very excited! Next time I will try this with honey to cut out the refined sugar as well. Crunchy Ema: March 2011

http://www.crunchyema.blogspot.com/2011_03_01_archive.html

Thursday, March 31, 2011. Chickpeas are my favorite (bean)! Lately I have been learning how well they go in so many different types of recipes. Here is a great crunchy snack I made up. Good protein nosh at work or just to take on the go! I love spicy food, so I go heavy on the hot pepper flakes but if you don't like too much heat just omit that ingredient. 1 can chickpeas rinsed and dried very. 1/2 tsp cayenne pepper. Dash hot pepper flakes. Bake at 400 for 35 - 45 min until dry and crispy. This makes yu...

Running, cooking, pottery, and general craftiness. Tuesday, May 17, 2011. Back to Morning Running. It was a shock to my system when I switched back to morning runs at the end of March. It had not crossed my mind that I would need to adjust to my old (now new) schedule. Well I did. But the change could not come at a better time. With the humidity settling in, 6 am is becoming the best part of the day for running after all. The tail end of sunrise this morning on my run. After having taken the pottery clas...

As well as a few of my other favorites:. 1) Here is the finished bottle. At the last minute of glazing I thought it would be fun to poor some blue into it. I'm glad I did. I like the subtle blue tint at the mouth of the bottle. I also really like the interaction of the shiny bottom glaze and the mat white top. Friday, April 22, 2011. Since last Apr...

Running, cooking, pottery, and general craftiness. Tuesday, August 2, 2011. Tangy Honey-Mustard Green Beans. My fiance and I have been doing a lot of experiments with making our own dressings. I've always been picky about buying all natural salad dressings from the store, but it's a fun challenge to make up your own. This honey-mustard dressing took a number of attempts, but I like the final product. It's got a lot of zing! The green beans and tomatoes at farmers markets are perfect right now! For the dr...
