One of the best things about summer is sweet fresh corn.I never buy corn during the rest of the year because if it isn’t summer, it isn’t time for corn on the cob. Here’s one way I like to celebrate the bounty of sweet summer corn- a definite crowd pleaser at summer gatherings. 2 TBLS olive oil. 2 large garlic cloves, minced fine. 2 TBLS Hot Pepper Jelly. 1/2 tsp sea salt. 1/4 tsp ground pepper. 6 medium ears sweet corn, husks removed.

Sweet, delicate and just a little bit fancy. So let them be impressed- there's no reason to spill the beans that scallops are really a snap to prepare! Seared Scallops with Warm Fennel Slaw. 1 1/2 lb dry. 2 TBLS olive oil. 2 medium shallots, finely sliced. 1 large fennel bulb, cored and thinly sliced. 2 tsp grated orange zest. 3 TBLS orange juice.

Not quite a cake and definitely not a bread…who could ask for more? We had Tuscan Blueberry Port chicken. Lemon Blueberry Bread with Lemon Glaze. 1/2 cup butter, softened. 1 cup granulated sugar. 1 cup sour cream. Zest and juice of 2 lemons. 2 1/4 cups flour. 1 tsp baking soda. 1 tsp baking powder. 1 1/2 cup fresh blueberries. 1 cup powdered sugar. 2 tsp whipping cream.
