November 4, 2015. I am so damn proud of myself (if you can’t tell from the title). Have you ever seen a veggie burger? It’s not pretty. It looks like the regurgitated breakfast of a farm animal. It’s brown and mushy with chunks of corn and carrot and God knows what else poking out as if trying to shake my resolve. There are vegetables in me Crystal, green, orange, yellow colorful vegetables…. Two years ago I hated sweet potato fries. Why couldn’t my dining hall just serve regular fries I wonder...And the...

Back in the Saddle. March 10, 2016. I turned 22 last week and feel like I’ve reached a period of real adulthood. I’ll be graduating college in 60 days. 60 days. I’m applying to jobs all over the place and am feeling so unsettled and up in the air about everything. Where will I be in 2 months? I’m not sure. No Soda. None. 2 desserts for the week. 1 New food a day (Extra points if it’s a veggie). In Buddhism they teach that nothing is permanent, everything changes. This is my year for change.
