Just another Melbourne food blogger…. The Estelle Truffles = Love. July 8, 2014. July 8, 2014. A refresh of The Estelle. Is, so far, paying dividends. It sounds a bit weird given it only opened three years ago, but things appear to move pretty fast in Scott Pickett’s world. In a little over the last twelve months he’s opened Saint Crispin. With Joe Grbac. Then last October, chef and business partner, Ryan Flaherty, left the business to start his own restaurant, Mr Jennings. And to my not-so-subtle segue.

There are a small handful of chefs that I genuinely revere because I’m enamoured with their style, technique and use of ingredients and flavours. Book will take some time to work your way through and if you’re on a budget, you can find some much-loved gems on the list that still have a typical restaurant mark up, but aren’t overly steep in price. Just another Melbourne food blogger…. Several weeks ago, I had a go at making my own bacon. This was my second foray into the world of simple homemade charcuterie, after duck prosciutto. Which I recommend as a good entry-level effort to the craft of curing. To make it smoky, you can lightly spray the meat with a liquid smoke before it’s popped into the oven. Monday, 9 June 2014. Real cider from Western Australia: Custard and Co. Most of the time I say no when I get offers of promo samples, but I made an exception to say yes to Custard and Co. When they approached me because I have FEELINGS about all the sickly sweet RTD fake "ciders". This is their Scrumpy (unfiltered and uncarbonated) and it's bloody DELICIOUS - fermented and full of the flavour of real apples. A Few Kind Words. Sunday, 28 September 2014. Custard and Co - Vintage Dry Apple Cider. His mix of traditionalism and modernism seems to be a winning mix. This is a cider brand making cider for the right reasons. I take my hat off to Ian, who quite funnily enough is from the cider crazy county of Somerset in England.
