This site is dedicated to the precious little girl born, February 11th, 2006 at 6:11 am. Her name is Ava Nicole. She was born 5lbs. 13 oz. 18 1/2 inches long. It was a beautiful day followed by one of the biggest snow storms in New York/New Jersey history. Enjoy the pictures, videos, blogs and anything else I stick here. Monday, March 8, 2010. Carrot and Walnut Cake. This is an unusual cake. It has not flour or baking powder. It consists mostly of ground nuts and carrots bound together with eggs and potato starch. The lemon and confectioners sugar glaze is a perfect topping. 2 cups walnut halves (about 7 ounces). 189; cup whole blanched almonds (about 1 ½ ounces). 1 ¼ cup plus 1 tablespoon granulated sugar. Zest of 1 lemon, coarsely chopped. 5 extra large eggs, separated. 1/3 cup potato starch. 188; teaspoon cinnamon.
