Roasted Beet Salad (Thanks Lynn). 1 lb spinach, roughly chopped. 5 oz arugula, roughly chopped. 4 oz goat cheese or feta cheese. 1/2 C walnuts/pine nuts, toasted. 1/2 C sherry vinegar. 1 T dijon mustard. 1 clove garlic, finely chopped. 3/4 C olive oil.
