This was an unusually good carrot soup, and incredibly simple, so I just wanted to record it so I remember what it was. 1 lb carrots, peeled and chopped into 2-3" pieces (large parts quartered). 1 small onion, roughly chopped. 1 tsp dried ginger, or 1 tbsp fresh, minced. This was also invented by me based on some recipes online. This was my most successful mole negro to date, so I will blog it. As I see it, the ratios of this recipe depend a lot on what you're looking for in a mole. The important thing to take away is the method. 2 tbsp raisins (ish). 2 pinches of allspice. 1/2 an onion, chopped.

This past weekend, B decided he really wanted more cornbread, so after considerable googling I found it again. From Epicurious. With very few adaptations. 1 c cornmeal (I used half white and half yellow). 2 tsp baking soda. 1 tsp baking powder. 1/2 c grated cheese (I used a finely grated Colby/Monterrey Jack mix). 1/4 c melted margarine.
