The Debreuil Family Cookbook. Friday, January 18, 2008. 1 cup yellow cornmeal. 1 cup white flour, sifted. 2 teaspoons baking powder. 1 large egg, lightly beaten. 188; cup butter, melted. Heat the oven to 400 degrees. Sift dry ingredients together into a bowl and make a well in the center. Mix together the egg, milk and butter and pour into the well. Using a whisk, combine swiftly with a few strokes. Do not overbeat. Spoon batter into muffin tins. Bake 20 to 25 minutes. These are excellent with chilli.
