Friday, June 28, 2013. This dish is so awesome and really easy. When I saw the recipe posting on FB I had to give it a try. Highly recommended for those nights when you're really tired, don't feel like going out but want something really delicious! Wednesday, February 12, 2014. Had this lovely little salad at Po in the west village this last weekend and wanted to make it myself right away. The combination of flavors is fantastic and would pair well with just about anything. We had ours with a broccoli pasta dish. 3-4 cups fresh baby spinach leaves. 1/2 red onion thinly sliced. 1/2 orange bell pepper sliced. 1/4 cup craisins (dried cranberries). 1/3 cup toasted pine nuts. 4-5 clumps goat cheese. Olive oil and red wine vinegar. Slice the bell pepper.

Thursday, January 30, 2014. This is a fabulous pasta dish that is healthy and easy to prepare. Credits to Sunset Magazine for the recipe. 2 zucchini cut matchstick. 2 cups whole wheat fusilli. 1/3 cup pine nuts. Plenty of parmesan cheese. A handful of fresh basil leaves chopped. Salt and pepper to taste. Roast the zucchini at 350 degrees with butter, pressed garlic, salt and pepper with olive oil drizzled on top. Roast until zucchini is done. Cook pasta according to package instructions.
