株式会社松屋フーズ まつやフーズ、英称 Matsuya Foods Company, Limited は、牛丼 牛めし 豚丼 豚めし カレー 定食などを販売する 松屋 をチェーン展開している企業。 創業者の瓦葺利夫が1966年に東京都練馬区羽沢の住宅街に 中華飯店 松屋 を開業したのがその始まりである。 この店がなかなか軌道に乗らなかったこと、商店街で商売を試してみたかったこと、専門誌で紹介されていた 何時屋 の ぶっかけ という牛めしに衝撃を受けたこと、吉野家の味に感銘を受けたことなどにより、瓦葺が牛丼の研究を重ね独自の味を完成させて[1]、1968年6 月に江古田に牛めし 焼肉定食店としての 松屋 をオープンさせた。 これは一号店の江古田店近辺は学校が多いことから昼間は学生で賑わい、ベッドタウンでもあることから夜は独身サラリーマンが戻ってくるという当時の土地柄を考慮して、学生層向けの牛めしだけではなく独身サラリーマン層向けには定食とカレーが必要と考え、 牛めし 定食 カレー の三本柱でメニューを構成することになり、その後の展開においてもこの方針を維持している[2]。
