So this morning for breakfast I tried making the Cranberry Upside Down Cake with blueberries instead of cranberries. (We're on a blueberry kick since we're trying to include as many superfoods in our diet as possible.) Well, it was a huge hit! So easy. So refreshing on super hot days! 2 c filtered water. 1 c fresh lemon juice (about 3 large Sicilian lemons). 1 t grated lemon zest.

Substitute 1 c. milk plus 1 T. vinegar or lemon juice). 3/4 cup vegetable oil. 2 tablespoons frozen lemonade concentrate.

But, my complaint against homemade brownies is that they're lighter in color and more dry and cake-like than I like. I love those dark, rich, chewy brownies in a box from Duncan Hines. Returning to my cajun-food-lovin' roots once again, I made this using red fagioli borlotti beans that I cooked overnight in my crock pot.the easiest way I know to cook dried beans. It's basically an Emerill Lagasse recipe, but I like adding a little chicken in for some additional flavor. And of course, parmesan.Emerill doesn't call for parmesan! Italian sausage, sliced. 1/2 t ground ginger.

I love those Pillsbury crescent rolls that come in the can in the refrigeration section. These are pretty close to that. Mmm, mmm good. Scratch and converted recipes for life overseas. Tuesday, December 15, 2009. Pumpkin Cream Cheese Muffins. Supposedly these are similiar to the ones you get at Starbucks. I don't since I've never had a Starbucks one, but goodness, these were yummy! I didn't have pecans since those have to be imported so I just substituted a little cinnamon/sugar sprinkle on top. (I'm sure the pecan would be awesome.) And these were just as good the next morning. I'll be making these again! Mix all ingredie...
