I began this blog, to share my journey into cooking, and adventures of sharing meals, with my wonderful friends and family. Saturday, April 2, 2011. Potato, Pancetta, and Gruyere Soup. I served this as a late Saturday night supper with garlic bread and a nice, crisp white wine. 3 ounces pancetta, chopped. 1 medium onion, chopped fine. 2 cups chicken broth. 1 1/4 cups water. 4 medium Russet potatoes, peeled and cut into 3/4-inch cubes. 1 tablespoon all-purpose flour. 2 cups grated Gruyere cheese.

Cook 1 chopped red onion, 3 sliced garlic cloves, some red pepper flakes and 1 teaspoon salt in 3 tablespoons drippings. Add 5 cups grape tomatoes, cook until softened. We served the pasta with a side dish of steamed English peas and mixed the peas into the pasta on our plates. 8 ounces angel hair pasta. 2 tablespoons extra virgin olive oil. 1 clove of garlic, minced. 1/2 of a medium onion, chopped. 12 ounces chicken breasts, cut into 1 inch chunks.
