Thursday, May 28, 2009. Lemon Cheesecake with Blueberry Sauce. 1 lb (2-8 oz) cream cheese. 1 pint sour cream. 1 lemon, zested. 1 lemon, zested nad juiced. Preheat oven to 325. Beat cream cheese for 1 minute. Add egg one at a time. Gradually add sugar. Beat 1-2 minute. Add sour cream, lemon, and vanilla. Scrape sides and mix well. Meatball Pizza with Sauteed Onions. 1/4 tsp dried rosemary. 1 lb ground beef. 1 large onion, 1/2 sliced, 1/2 chopped. 3 garlic cloves, chopped. 3 Tbsp tomato sauce. 1/2 tsp dried oregano. Preheat oven to 350 degrees. Cut pizza dough in half. Roll out each half into 1/4-1/2" thick circles. Drizzle olive oil over crust and sprinkle with rosemary. You just pick out your weekly menu on Sunday and move them to the refrigerator. When you get home, dinner is ready for you to bake. Just add the suggested side dish and you are ready to go! Dinner Doldrums No More

Wednesday, November 19, 2008. I found this recipe. At Vegan Yum Yum. And it looked so easy and I had a squash just sitting there so I had to try it. I made foccacia to go with it (see previous post) and guess what folks- it was easy and delish! It calls for Delicata Squash, but you can use any kind of fall squash that you have. My only problem was that one of my sons broke out in hives, allergic to cashews. UUUUGGGGHHHHHHHH. Will I make it again? Serves 4 large bowls, 6-8 Cups. 4 Cups Rich Vegetable Broth.
