Are you ready for some Meatballs? May 17, 2015. I also picked up Weisenberger oat bran and came up with a lightly sweet, giant, soft cookie that is reminiscent of the top of a bran muffin. These oat cookies are light on the sugar and the protein content in the oat bran helps to lower the glycemic index of a moist, chewy cookie. Pinch smo...

Easy Weeknight Suppers

From the Kitchens Of. Counting the Beans and Cooking the Books. Brigitte's Adventures as an Accountant-turned-Chef. You are here: Home. April 12, 2015. The most common request I get is for easy weeknight recipes! I love to cook and eat at home, especially on weeknights. For me, it just seems like more work to have to get dressed, drive somewhere, order, and wait than it is to throw something together in the comfort of my own kitchen. From the Kitchens Of. Counting the Beans and Cooking the Books. Brigitte's Adventures as an Accountant-turned-Chef. You are here: Home. April 26, 2015. My favorite way to spend Derby Day is with a deliciously packed picnic out at Keeneland. I’m always looking for Kentucky inspired recipes that would work well for the big races and here are three of them! Pimento Cheese Deviled Eggs. 6 eggs, hardboiled. 1 tsp mustard (we used KY Proud bourbon mustard). Pinch of freshly ground black pepper. 3 tbsp olive oil.

From the Kitchens Of. Counting the Beans and Cooking the Books. Brigitte's Adventures as an Accountant-turned-Chef. You are here: Home. April 19, 2015. I love when unexpected healthy ingredients find their way into otherwise indulgent recipes. I can usually see right through some of these healthy tricks (you can’t fool me into thinking that zoodles or spaghetti squash are anywhere close to real pasta), but these swaps are subtle and delicious. Loaded White Bean Soup. 2 stalks celery, diced. 1 onion, diced.
