Monday, November 06, 2006. Paneer is a by-product of milk and is surprisingly easy to make if you follow these simple steps. 1 ltr full cream. Put the milk to boil. When it starts boiling, switch off the gas and wait for a while. Add the lemon juice and when it curdles, drain on muslin cloth. If you want solid paneer, put some weight on the drained paneer and leave it on for some time. Use as required in the recipe. You can also use vinegar or citric acid crystals instead of lemon juice.

Monday, November 06, 2006. 1 cup cleaned tamarind. 1/2 cup dates deseeded. 1/2 tsp. red chilli powder. 1/2 crushed cumin seeds. Wash the tamarind clean. Place the tamarind, jaggery, sugar, dates and water in a deep boiling pan. Soak for a few minutes. Put to boil for about 7-8 minutes. Cool to room temperature. Blend in a mixie till smooth. Strain and transfer to the pan again. Boil till thick enough to coat the back of a spoon thinly. Add the seasoning. Cool again. Makes: 2 1/2 to 3 cups.
