1 medium sweet potato, baked, skin removed. 1 can kidney beans, drained and rinsed. 1 tablespoon lemon juice. 2 tablespoons almond butter. 2 tablespoons olive oil. 2 teaspoons ground cumin. Dash of cayenne pepper (to taste). Salt and ground pepper (to taste). Place all in ingredients in a food processor and blend until creamy. Serve with sweet potato chips or pita wedges. We now have lots of different kinds of jams, jellies, butter, etc. all made from produce from the farm. More tomatoes and nasturtiums.

I keep sweet potatoes on hand all winter (and it's becoming easier and easier to get local ones without pre-winter hoarding - - Dodson Farms. AKA the sweet potato people, are always at the winter market on Saturday mornings in the Tsunami parking lot), and frequently make these treats. They're good for pretty much any meal and reheat well.
