Friday, July 6, 2012. Sweet Potato and Black Bean w/ Smoked Paprika Quinoa. Just made this savory salad up one day in September with ingrediants we had on hand. I served it with some grilled meat, yet it is great on it's own too. 1 cup quinoa (cooked - approximately 1 1/2 cups). 1 cup sweet potatoes (cubed - roasted). 1 cup black beans (cooked - can use canned, rinse and drained). 1/4 cup scallions (chopped). SPRINKLE w/ pepitas (pumpkin seeds). 2 Tbsp extra virgin olive oil (evoo). 1/4 tsp ground cumin.
