Tuesday, May 22, 2012. 1 whole wheat tortilla. 2 Tbsp reduced-fat mozzarella. 2 Tbsp shredded parmesan or parmesan/romano blend. 2 Tbsp Pizza sauce. 1/3 cup sliced mushrooms. 1/8 cup sliced onions. 188; cup sliced bell peppers. 188; tsp Italian herbs. Preheat oven to 425. Place tortilla on baking sheet lined with parchment paper. Brush pizza sauce over surface of tortilla. Sprinkle cheeses on the pizza sauce. Top with pepperoni, followed by mushrooms, onions and bell peppers. Sprinkle with Italian herbs.

Make the whole recipe so you can use the leftovers at another time. 1 cup diced onion. 2 cloves garlic, minced. 1/4 tsp Kosher salt. 1/8 tsp black pepper. 2 Tbsp tomato paste. 28 oz can diced tomatoes - more lycopene in canned. 1/4 cup fresh basil, chopped. 1 lb ground turkey. 1/4 cup minced onion. 1 clove garlic, minced. 2 tsp dried oregano. 1/4 cup seasoned bread crumbs. 1 egg, lightly beaten. 1/4 tsp Kosher salt. Total fat: 7 g.

Friday, May 11, 2012. Mock "Ice Cream" Sandwich. Line a 9x12 baking dish with 1 layer of graham crackers broken into half sections. Spray a dollop of whipped topping in the middle of the crackers. Place another half graham cracker on the top, pressing to spread out the whipped topping. Place in freezer for 30 minutes to an hour. Enjoy!
