Rör om till en gröt. Låt stå i rumstemperatur över natt. Blanda rågsurdegsgrund med vattnet och mjölet sen låt stå i rumstemperatur över natt. Måndag 7 mars 2011. 200 g dinkelmjöl fullkorn. 250 g dinkelmjöl, fullkorn. 80 g fint rågmjöl. Blanda vatten, mjöl och jäst i hushålls-maskin i 10 min, lägg till salt och knåda i ytligare 5 min. Lägg degen i en bunke med lock och låt stå i rumstemperatur övernatt. Blanda ut jästen med fördegen. Tillsätt mjöl och arbeta degen i hushalls-maskin i 10 minuter. Arbeta degen i ytterligare 8 minuter. Lägg degen i en oljad plastlåda med lock och låt jäsa i 120 minuter. Sätt ugnen på 250 grader. Söndag 6 mars 2011.
