Eat, Live, Run. Winter Vegetable Pot Pies. December 14, 2011. Actually, I take that back. I love Florida winters…and California winters….and Texas and Georgia winters, too! I like Chicago winters for about 12 hours and Milwaukee winters are fun when you’re inside wearing puffy vests, drinking red wine and watching the snow fall at a distance….key: at a distance. But mostly, I just love wintery. Pot pies, beef stew, chicken and dumplings. CHRISTMAS COOKIES. You catch my drift. I got these cute Le Creuset.

Thursday, September 30, 2010. I realized that my butcher at Whole Foods gave me 2 pieces of 1" thick beef tenderloin instead of 2" thick until I got home. But I was going to make beef wellington tonight! Maybe I can name it beef steak pocket? After all, it doesn't matter what it's called, right? 2 pieces of 1" thick beef tenderloin. 2 1/3 tablespoons Boursin garlic and chive cheese. 3 tablespoons canola oil. 1/4 sheet puff pastry (I use Dufour. 1 small shallots, minced. 1 teaspoon fresh thyme, minced.

It is so easy to work with that to matter what you make, the pastry looks and tastes as though it were made by a French pastry chef.
